Tomini the Open

Serves: 2 people Difficulty ': Easy Preparation time: 20 minutes Ingredients 4 fresh tomini 4 tablespoons extra virgin olive oil 1 bunch of parsley 1 tablespoon capers 1 tablespoon vinegar 2 anchovies (optional) salt pepper ---- ---------------------- CASE tomini Put in a plate, sprinkle a bit on each Tomino 'salt and pepper.

Place the parsley, washed and cleansed, on the board along with capers (rinsed well under running water if they are salted). Chopped capers and parsley with the crescent. If you prefer, you can use instead of the crescent of the knife cutting the meat all over (like when the butcher to prepare the ground beef to eat raw).

Pies with vegetables and cheese

Serves: 4 people Difficulty ': Easy Preparation time: 50 minutes INGREDIENTS 750g. of beets 2 potatoes 50g. cream 150gr. thick slices of ham 4 tablespoons grated Parmesan cheese 2 rows of goats 1 shallot butter salt pepper TO SERVE fruit chutney (Lazzaris advice, very good and delicate) ---------------- ---------- PROCEDURE Peel beets and wash thoroughly.

Peel the shallots. Peel the potatoes, wash and cook, drain and cut into 8cm discs. in diameter. Blanch the beets for 4 minutes in boiling salted water, then drain and squeeze well. In a skillet, melt the butter and brown the chopped shallots and beets. Add the cream and pepper and cook.
