Melon with Goat Cheese Mousse

INGREDIENTS. 1 melon 1 small glass of Port (or very dry Marsala) 4 goats 150ml. whipping cream 4 black olives 1 tablespoon shelled pistachios chives 2 tablespoons extra virgin olive oil salt pepper. PROCEDURE. Cut in half 'the melon, remove seeds and cut into thin slices. Collect them in a dish and pour the wine. Put to rest in the refrigerator for an hour. With the tines of a fork, mash the goat and Incorporat oil, a little salt and pepper. Whip the cream and mix it with cheese. Chop olives, pistachios and some chives. Mix together the cream and refrigerate.


When ready to serve, together with marinated slices of melon, you have done to bring out of wine and arranged on a platter with goat cheese mousse.
