Delicate soup

Serves: 4 people Difficulty ': Easy Preparation time: 40 minutes Ingredients 4 eggs 150g. Semolina 100g. 80g of parmesan cheese. 50g of lean ham. 1l of butter. and 1 / 2 of meat broth 1 pinch nutmeg 1 bunch parsley, chopped salt and pepper in a bowl. Beat egg yolks with the grated Parmesan cheese (keep aside a little), meal, nutmeg, parsley, salt and pepper.

Mix these ingredients well, then add the finely chopped cooked ham, the butter in a double boiler and then the egg whites until stiff. Grease a baking dish and pour all the ingredients well blended. Preheat oven to 180 degrees and bake for 25 minutes. Let the mixture cool then cut into cubes rather small, all alike.

Pre-heat the broth, when I reach 'boiling, pour in the cubes, cook for a few minutes and serve with Parmesan cheese that you have kept aside.
