Avocado and Shrimp

Servings Serves: 4 Difficulty ': Easy Preparation time: 30 minutes. INGREDIENTS: 2 avocados juice of 1/2 lemon 4 lettuce leaves 1 tablespoon of aromatic vinegar, salt, pepper 3 tablespoons extra virgin olive oil 1 tablespoon chopped chervil 100g . peeled cooked shrimp

PROCEEDINGS: Wash and cut the avocados in half '. Lift off the core and scrape the pulp with a spoon and place in a bowl after having cut into cubes, the empty husks aside. Sprinkle avocado with lemon juice and put it in the refrigerator along with the empty husks. Wash the lettuce leaves, dry them and place one on each plate. In a bowl mix the vinegar aroma with a pinch of salt and pepper, mix with the oil and Incorporat 3/4 of chervil.

Add sauce to shrimp and diced avocado and mix well. Helping with a spoon spread the mixture in the empty husks of avocado. Place 1 stuffed skins of every leaf of lettuce and decorate with remaining chervil. Serve immediately.

TIP: ripe avocados to buy at the right point, choose those that have a certain consistency, but they occur soft to the touch. Make sure the skin is smooth, shiny and free of brown spots. If they were not mature enough, wrap them in newspaper and let them ripen at room temperature (between 20 and 21 degrees).
