Shortbread citron

Serves: 40-50 biscuits Difficulty ': Easy Preparation time: 30 minutes INGREDIENTS 300g. flour 1 tablespoon baking powder 200g. sugar 2 eggs 60g. 150gr candied citron. melted butter 1 pinch of grated ginger 4 tablespoons orange juice -------------------------- PROCEDURE Mix the flour with the baking powder and arrange to fountain on the pastry, put the middle sugar, melted butter, eggs, orange juice and bits of candied citron.

Knead the ingredients until dough is firm and smooth. Roll out the dough with a rolling pin into a sheet 5mm thick. and cut, with the help of a round mold, lots of biscuits. Place them on a baking sheet covered with a sheet of parchment paper, well spaced and cook in the oven already 'hot at 180 degrees for 20 minutes.

Let the cookies cool completely, then detaching it with the help of a small spatula and arrange on a platter.
