Light Strawberry Mousse

Serves: 4 people Difficulty ': Easy Preparation time: 30 minutes plus cooling INGREDIENTS 500gr. strawberries 2 tablespoons honey Grated zest of 1 lemon 100g. ricotta cheese 2 sheets of gelatine 1DL. pink grapefruit juice PROCEEDINGS -------------------------- Chop the leaves of gelatine, put them in a bowl and cover with two fingers water, leave it for 15 minutes.

In a small saucepan heat the grapefruit juice with honey, drain and squeeze the pieces of gelatine and add to hot liquid. Stir until 'the gelatin will not' completely melted then turn off the heat and let cool. Wash the strawberries, pat dry, mondatele (keep from four of the most 'big) past the other hand in a blender (use the fine grid), mix them with ricotta cheese in a blender and blend until everything' will not get a smooth and homogeneous.
