Milk Biscuits

Serves: about 20 cookies Difficulty ': Easy Preparation time: 45 minutes INGREDIENTS 250g. 150g of flour. 100 grams of potato starch. 100g caster sugar. butter 2 eggs 200g. 10g milk. baking powder salt vanilla PROCEEDINGS -------------------------- In a large bowl, mix the flour with the starch, add a tiny pinch salt, yeast and sugar, then pour in the middle, little by little melted butter (not hot), beaten eggs and milk.

Knead the dough thoroughly (but quickly enough), then cover it and put it to rest for 15 minutes. After this time, flatten into a thin sheet of 1/2cm. Set aside and thick discs with a punch of 4.5 cm. in diameter. Place the disks on the plate greased (or in some trays) and put them in the oven for 10-15 minutes.

Sfornateli when they are still clear. Let them cool a bit 'and then detaching from pans and place in a hermetically sealed housing. They're great with your coffee, but also at any time of day.
