Souffle 'lemon

Serves: 4 people Difficulty ': Media Preparation time: 30 minutes INGREDIENTS 3 eggs 75 gr. icing sugar 1 lemon 1 / 2 teaspoon potato starch or cornstarch 15 gr. butter cookies like "cat language" -------------------------- PROCEDURE Divide the eggs putting the yolks in a bowl and whites in a 'other.

Beat the egg yolks with the sugar until frothy, then add the grated rind and juice of lemon, then the starch and cornstarch. Mix well and finally gently incorporate the egg whites until stiff. Butter a souffle mold 'or 4 bowls and pour the mixture of clay. Place in preheated oven at 170 degrees and cook until the souffle 'will result' to be inflated and gold surface.

Serve with biscuits and, at will, with a vanilla sauce.
