Cream of potato and leek

Ingredients: For 4 persons: 300 gr potato, 300 g leeks, 4 tablespoons extra virgin olive oil, 1 tablespoon chives, chopped 2 bay leaves, 1 pinch of thyme, salt. Difficulty: Easy. Preparation: 45 minutes. Preparation: Clean the leeks and cut into slices very thin. Put them in stew for a few minutes with the oil, add potatoes, peeled and cut into cubes and cover with hot water.

Add bay leaf, thyme and cook for half an hour. With an immersion blender reduces everything in cream. Decorate the plates before serving with a pinch of chives.
