Spaghetti with arugula pesto are a first variant of the classic pesto with the basil. Ingredients for 4 persons - 400 g of spaghetti - 50 g rocket - 6 tablespoons pine nuts - 4 cloves garlic - 125 ml of extra-virgin olive oil - 100 g of grated cheese - salt PREPARATION Lightly toast the pine nuts in a non-stick pan.
Wash carefully the rocket and put it in a blender with garlic, pine nuts and blend together until mixture is creamy. Add oil, cheese, a pinch of salt and mix the ingredients. Pour the pesto arugula in a large bowl. Boil the spaghetti in salted water. Once cooked, drain the pasta, season with the pesto and serve immediately.
If the pesto seems too thick, add a bit 'of water from the pasta.
