The koftas are a kind of traditional meatballs Middle East and South Asia, by region are round, cylindrical, and in this case more or less long, sometimes strung on a skewer. 500 grams of beef, ½ red onion, 1 large clove garlic, 50 grams of toasted almonds, 1 c / p rasa of ginger powder, 1 c / p rasa cumin, ½ c / w black pepper 6 ozs. Smoked salt roasted peppers and extra virgin olive oil. For the sauce 125 grams of creamy yogurt, 1 c / w sambal oelek (on this occasion we used a commercial, but you can do with this recipe sambal), 2-3 sprigs fresh cilantro, salt and freshly ground black pepper ground.
Peel and chop onion brunoise, peel the garlic clove and rállalo. Toast the almonds if you have it raw in a pan without oil. Put the meat in the mincer and proceeds to chop, then add the onion, garlic, almonds, ginger, cumin, salt, pepper and smoked paprika. You could prepare minced meat grinding all the ingredients together, but if you do it separately, you will find tasting bits of almond and onion, so do it according to preference.
Divide the dough into portions of the same weight, you can get about 14 units as we indicated, or if you do some more smaller. Croquette shape each portion and string them on a skewer (if you have small skewers can put two parts in each skewers or cut into two). Put a griddle or frying pan with a few drops of olive oil over medium-low.
Do the koftas turning them occasionally to brown all the way around. Need to be done on medium heat to reach the interior, making the meat inside and without burning out. Prepare the sauce, mix yogurt with sambal oelek, knife bites of cilantro leaves and incorporate it finally add salt and pepper to taste, mix and reserve.
Kofta Serve steak with spicy sauce accompanied by a little salad, the amount of koftas for diners may be three or four, depending on the needs of each and the rest of the menu.
