Croquette potatoes and spinach

The potato croquettes and spinach are a specialty! Their breading crispy and the inside soft, making them truly unique. INGREDIENTS - 200 g potatoes - 200 g of spinach - 2 eggs - 50 g of grated cheese - chopped parsley - breadcrumbs - salt and pepper - oil for frying PREPARATION Clean the spinach thoroughly and boiled in salted water.

Drain well and strizzali to remove excess water. Boil the potatoes and mash them. Collect the puree into a bowl, combine chopped spinach, egg, cheese, parsley, a pinch of salt and pepper. Mix ingredients until dough is smooth. Form the croquettes, pass them in beaten egg and bread crumbs in order to have an extremely crisp breading.

Fry in hot oil until golden brown.
