Noodles with vegetables

Serves: 4 people Difficulty ': Easy Preparation time: 30 minutes INGREDIENTS 200g. of soy noodles 3 carrots 2 courgettes 1 red pepper 1 yellow pepper 2 onions olive oil soy sauce salt -------------------------- PROCEDURE Peel and diced peppers and the two leave them in a bowl. Peel and wash the carrots and cut into julienne strips and set aside this one.

Do the same with the zucchini. Peel the onions from the outer leaves, then chop finely. In a pan, best if you use the wok, heat 2 tablespoons oil, add the chopped onions and let soften for 7-8 minutes on high heat stirring constantly. Add the zucchini and carrots and continue cooking for another 5 minutes, finally add the peppers and cook 5 minutes.

It 'important that the vegetables cook on high heat to stay crisp, but you have to prevent burn care to stir frequently. Meanwhile, heated salt water in a saucepan and when it boils remove from the heat and soak the noodles in soy for a few minutes. Drain and transfer the noodles into the pot of the sauce, cook for 2 minutes, then shut off, seasoned with 1 or 2 tablespoons of soy sauce and serve hot.
