Carrot porridge with coconut and maple syrup

The idea I have - again - by ohsheglows. This morning I looked out the window, and found that after all the beautiful spring-like days now back in the direction of ... winter is cold, wet and just gray. Since again a nice hot porridge in the morning had her as a mood! This is cooked with carrots, and spiced with cinnamon, coconut, maple syrup and walnuts.

Cookeing quickly, it warms the body properly from the inside. Simply delicious! Unfortunately, I had forgotten drüberzustreuen the walnuts for decoration, so they are not yet in the photos. Just simply think carrot shred or chop very finely. Milk, lemon juice and coconut cream in a saucepan, let it boil.

Stir in cinnamon, nutmeg, salt and ginger. Add oats and carrots, reduce heat and let simmer for 8 minutes until slightly thickens the mixture. Then, vanilla, walnuts, and maple syrup, mix in a bowl. Sprinkle with coconut chips and walnuts and drizzle with the maple coconut mixture. Sprinkle with cinnamon and serve immediately.
