Tortillas stuffed with hummus, spinach and beef

A lack of time to cook, often resort to a sandwich or snack at a pizza ... in short, working fast to make and to satiate our needs. One proposal we have for these cases, or simply because they feel like a meal, or dinner, these tortillas are stuffed with humus, spinach and beef, as you can imagine, a dish only very nutritious, tasty and easy to do.

8 flour tortillas, 300 g of fresh spinach, c / n of hummus (see recipe for hummus), 300-350 grams of beef for iron, 120 grams of white scamorza or fresh mozzarella, freshly ground black pepper, 1 clove garlic , extra virgin olive oil and salt. Wash spinach and separated into leaves, once they are dry. Saute in a pan with garlic, peeled and chopped, and a little olive oil, do it in batches, as the initial volume of the spinach does not allow to be made all at once. Add salt and pepper to taste. Cut beef into strips and saute well, season to taste in a skillet with a little olive oil.

Arrange tortillas on work table, spread with the hummus, then place the spinach, slices of scamorza or mozzarella, and place the meat on them. Form a roll and put a pan or grill to heat.
