Sweet potato gratin oatmeal for breakfast

First, cook diced sweet potato soft. Then in milk and oatmeal with Chia seeds are simmered. By Chia seeds get everything a jelly-like, compact texture. mixed in the sweet potatoes and a banana and mashed, spiced with cinnamon and maple syrup, among other things. The mass will be golden brown with walnut-streusel topping. For Oatmeal: For the walnut streusel: Preheat oven to 175 degrees.


Sweet potatoes in plenty of boiling water for 5 minutes then strain. Add the milk, Chia seeds and rolled oats in a large pot and bring to a boil. Reduce heat slightly and simmer 5-7 minutes. With a potato masher mash into the sweet potato and banana, leaving a few small pieces for the "bite".

Cinnamon, salt, nutmeg, vanilla and maple syrup, and let it simmer for a few more minutes. Pour into a small shape. For the streusel mix all ingredients with a fork until it becomes a crumbly mass. Sprinkle over the oatmeal-mass, and bake for 20 minutes. Then grill top over high heat until the crumbs are golden brown and crispy.

Serve immediately. Tastes to go straight from the fridge with a sip of cold milk mixed super tasty too.
