Rice salad in coconut

Serves: 4 people Difficulty ': Easy Preparation time: 40 minutes + marinating INGREDIENTS 250gr. 200g of rice. 2 white onion 1 green pepper coconut curry parsley, lemon mint olive oil salt Slice the onion in PROCEEDINGS -------------------------- rings, collected in a colander, add salt and let drain for 3 hours.

In the meantime, boil the rice in salted water, drain and let cool. Split in half 'coconuts and empty the pulp. Finally, seasoned rice with 80gr. of coconut flesh into cubes, bell pepper peeled, cut into cubes, a large pinch of curry powder, salt, onion squeezed from the vegetation, 100gr.

oil, lemon juice, mint and parsley, distributed rice in half coconuts arranged in the serving dish, garnish as desired and serve immediately.
