Sweet and sour onions

Serves: 4 people Difficulty ': Easy Preparation time: 50 minutes INGREDIENTS 700gr. 30g spring onions. butter 1 tbsp caster sugar 125ml. white wine 2 tablespoons white wine vinegar zest of 1 / 2 lemon 1 fresh bay leaf 1 cinnamon stick, salt, pepper ------------------- PROCEEDINGS ------- Please blanch the onions for 3 minutes in boiling salted water.

Drain and peel. Melt the butter in a frying pan, add the onions, sprinkle with sugar and let brown over high heat for about 3 minutes, stirring often. Add the wine and vinegar, add lemon zest, bay leaf and cinnamon, salt and pepper. Mix well, cover with lid and simmer for about 30 minutes on low heat: the onions should be well taken.

Remove the bay leaf and cinnamon. Picked up the onions with a slotted spoon, transfer them to a platter and cover them so they remain hot. Do reduce the cooking liquid over high heat for about 2 minutes, until 'will result' thick and pour it over the onions. Delicious to accompany boiled meats.
