Chocolate Truffles

Serves: 4 people Difficulty ': Easy Preparation time: 20 minutes + 2 hours and 30 minutes in the refrigerator INGREDIENTS 200gr. dark chocolate squares a cover type (we need about 4) 2 tablespoons milk 2 egg yolks 5g. cocoa butter -------------------------- proceed with a large knife to chop the chocolate squares and put them in a saucepan, add the milk and brought the pan over low heat, melting the chocolate, stirring several times with a wooden spoon or spatula.

When the chocolate will be 'very loose and will have' formed a thick, smooth, turn off the heat, but leave the pan on the stove so that it cools too much. Then built the first cream the butter, then the two egg yolks, stirring until the butter is 'completely dissolved and will be' well mixed to the mixture along with egg yolks.

Let cool, then pass it in the fridge for a couple of hours so that it solidifies well. If you want to speed up the time you put in the freezer for 30 minutes. Take the cream and taking small portions with a dessert spoon, form into balls rather irregular work just with the hands to soften the mixture too.

Arrange on a plate and sprinkle with the cocoa powder passed through a sieve to make it more 'fine and dusty. Place truffles on a plate and place in refrigerator for 30 minutes.
