Queens with aromatic sauce

Serves: 4 people Difficulty ': Easy Preparation time: 70 minutes Ingredients 280 gr. 600g of pasta type queens. firm ripe plum tomatoes 3 dried tomatoes in oil 1 small bunch of herbs (thyme, marjoram, chives, basil, parsley) 2 tablespoons extra virgin olive oil garlic salt pepper ----------- --------------- PROCEDURE Wash the tomatoes and scald in boiling water for a couple of minutes after having engraved a cross near the stalk; pass them under cold water, peel, remove seeds and cut in half 'in the sense of length.

Arrange the tomatoes on a baking sheet lined with parchment paper and bake in oven at 90 degrees for one hour. Meanwhile wash and chop the herbs, I'll have to get 2 tablespoons, then transfer the mixture in a saucepan with two cloves of peeled garlic and oil. Cover, lower the heat to low and cook the herbs in water bath for 10 minutes.

Chop the dried tomatoes in oil drained well they are preserved. Transfer the aromatic oil in a bowl (made by boiling herbs in water bath), remove the cloves of garlic, add the chopped sun-dried tomatoes and cooked in the oven, seasoned with a pinch of salt and freshly ground pepper. Boil pasta in abundant boiling salted water, drain it al dente and cool it quickly under cold water, then put it in the bowl with the sauce and season and mix well.

Let rest at least 10 minutes and serve.
