Rigatoni full cream sweet onion and peas

Serves: 4 people Difficulty ': Easy Preparation time: 50 minutes Ingredients 280 gr. type of whole wheat pasta rigatoni 5 white onions white wine 200g. pea already 'cleaned 1 tablespoon olive oil 1 tablespoon brown sugar salt pepper PROCEDURE -------------------------- Put on the fire a pot with water and bring to a boil.

Meanwhile the world all the outer leaves from the onions, then slice them into rounds. In a saucepan heat the olive oil and after a minute add the sliced onions, then let browning for a few minutes, then deglaze with white wine and turn the heat to evaporate the alcohol. At this point add the brown sugar, a pinch of salt, ground pepper and mix well.

Cover with a lid, reduce heat and cook the onions slowly for 20 minutes, to soften them. If they were too dry, add a ladle of warm water. As soon as the water is boiling, salted with coarse salt and a handful of pasta tossed with peas and cook according to the time indicated on the package.

As soon as the onions are soft, frullatene 2 / 3. Drain the pasta and peas with the cream and seasoned with onion, salt and pepper and add the remaining onions. PEAS AND ONIONS ... onions and peas are a perfect match in the kitchen, two ingredients that you can always take home the onions in a basket in the dark and frozen peas in the freezer.
