Barley and beans

Serves: 6 people Difficulty ': Media Preparation time: 2 hours and 25 minutes + 12 hours of soaking INGREDIENTS 300g. pearl barley 300g. 250g of dried beans. 50 grams of pork ribs. lard 1 piece of ham bone 1 stalk celery 1 carrot 1 clove garlic 1 bay leaf 1 thread of olive oil salt pepper vegetable broth ------------------ -------- PROCEDURE Put the beans to soak in lukewarm water for 12 hours.

Chop the bacon and the garlic. Peel the celery and carrot. Put in a pot, three liters of salted water, add the chopped bacon and garlic, celery, carrot, beans, well drained, pork ribs, the piece of bone, bay leaf, a drop of oil, salt and pepper and let simmer on very moderate heat for 1 hour and 30 minutes (depending on the quality 'of the beans used).

After the specified cooking time, remove the bone and bay leaf and remove the pork chops from the pan, and scatter the flesh picked clean. Remove from the pan a good part of the beans and pass them to the mill. Put the meat in the pot of chopped ribs and the mashed beans, return the soup to a boil and add the barley extract.

Continue cooking for 40 minutes on low heat, stirring often. If the training were too dry, add a ladle of hot broth. When the soup and 'ready, taste it and if necessary, adjust salt and pepper. Travasatela service in a shallow dish and serve immediately.
