Cassatine mint and chocolate sauce

Serves: 4 people Difficulty ': Media Preparation time: 30 minutes INGREDIENTS FOR Cassatine 500gr. ricotta cheese 1 orange 50g. 50g almonds. 30g candied orange. of candied citron 1 sprig of mint 1 tablespoon honey 2 tablespoons powdered sugar FOR THE SAUCE 250ml. pasteurized cream 30ml. 50g fresh milk.

cocoa powder 100gr. 70% dark chocolate 1 tablespoon honey 1 tablespoon sugar PROCEEDINGS -------------------------- Pass the ricotta through a sieve to remove any lumps. Add honey, sugar, candied orange and citron, the madorle toasted 1 teaspoon grated orange rind and finely chopped mint.

Spread the ricotta cheese in small portions, wrapped in plastic film inside and let rest in refrigerator. Meanwhile, heat the cream with the sugar, honey and milk. At the first boil, add the cocoa and chocolate, and helping with a whisk, mix together until completely dissolved. Turn out each cassatina the center of a plate on which you previously paid the sauce and decorate as desired.
