Clam chowder

Serves: 4 people Difficulty ': Easy Preparation time: 1 hour INGREDIENTS 1.5 kg. 1dl of fresh clams. extra virgin olive 1DL. 100g of white wine. tomatoes 2 cloves of garlic bread, parsley, salt, pepper -------------------------- PROCEDURE Clean the clams well, put them in a shallow, wide pan , cover and put it on fire.

As the shells of shellfish open, remove them and put them in a dish (without throwing away the water that have produced the clams). In a saucepan, heat the oil and a clove of garlic, making sure to remove it before taking color. Add the tomatoes (diced and if 'fresh, or sauce), fish cooking water (filtered) and the finely chopped parsley.

Add the clams, white wine, salt and pepper and cook needed a few minutes. Serve hot with slices of toast (in oven, plate or pan with a little oil or butter) and rub with remaining garlic clove.
