Mousse is pineapple

Serves: 4 people Difficulty ': Easy Preparation time: 30 minutes plus cooling INGREDIENTS 800g. of chopped pineapple lemon juice 30g. jelly jam rose mint 200g sultanas. PROCEEDINGS -------------------------- Whisk sugar pineapple pulp in the blender. Soak gelatin in cold water. Prepare a syrup by boiling water, sugar and lemon juice, dissolve the gelatin, add the mixture to the pineapple mousse and refrigerate.

Congeals when the mousse, pour into cups and decorate with rose marmalade, raisins and mint leaves.
