Rice Soufflé

Serves: 4 people Difficulty ': Hard Preparation time: 1 hour INGREDIENTS 200g. Rice 20cl. 180g of milk. brown sugar 4 eggs, lemon rind, butter, salt PROCEEDINGS -------------------------- Cook rice in milk for 40 minutes over low heat. Divide the egg yolks from the whites. Add salt just rice and stir in sugar, lemon zest and egg yolks.

Wait until the mixture is cool and then add the egg whites firm. Put everything in a buttered mold and bake at 200 degrees for 20 minutes.
