Escarole and bean soup

Serves: 4 people Difficulty ': Easy Preparation time: 2 hours and 40 minutes + soaking the night before INGREDIENTS 1kg. escarole 500gr. Dried beans to 5 ripe tomatoes 1 / 2 onion 50gr. of bacon extra virgin olive oil salt PROCEEDINGS -------------------------- Soak the beans the night before in warm water, drain and boil over a low flame for a couple of hours in plenty of water without salt.

In a saucepan with the oil fry the bacon and onion, add the tomatoes and cook for about 15 minutes, pour the beans and escarole, washed and coarsely chopped, adding about a quart of water. Season with salt and cook for 30 minutes. Stir often and serve hot.
