Serves: 4 people Difficulty ': Easy Preparation time: 30 minutes INGREDIENTS 210gr. superfine rice 100gr. 40g feta cheese type. mixed fresh herbs to your taste (basil, dill, marjoram, chives ...) 300gr. cherry tomatoes 1 lemon 1 red chilli 20g. almond garlic 3 tablespoons extra virgin olive oil salt pepper PROCEDURE -------------------------- Clean all herbs with a clean cloth, in so as not to lose the scent, coarsely crushed almonds, peeled garlic and mash with a heavy knife.
Transfer the herbs in a small mixer, add a dash of hot pepper, almonds and operated. Also paid to the filtered juice of lemon and extra virgin olive oil, driven more, then transfer the sauce into a bowl with the garlic, cover and allow to settle. Wash, dry and cut the tomatoes into quarters, then add them to the herbs in the bowl.
Cook rice in boiling salted water, drain it al dente, cool them immediately under cold water. Transfer the rice into the bowl with the sauce and tomatoes, mix well, taste, adjust salt and pepper and finally add the crumbled feta.
