Minestrone al pesto

Ingredients: For 4 servings: 200 grams of fresh shelled beans, 2 potatoes, 2 carrots, 2 leeks, 2 tomatoes, 1 onion, 3 zucchini, 1 celery stalk, 1 sprig of borage, a few leaves of escarole 2 tablespoons pesto, 2 tablespoons cheese, olive oil, salt. Difficulty: Easy. Preparation: 1 hour 15 minutes. Preparation: Clean and cut up the vegetables and potatoes.

Boil water in a saucepan, add the beans, leeks, carrots, onion, celery and tomatoes and cook for 30 minutes. Add potatoes, zucchini, borage, the escarole and cook for another 30 minutes, adding salt to the end. Season the soup with pesto and cheese and a dribble of oil.
