Turkey burgers

flour and stir. Add milk and cook for 10 minutes, stirring constantly, until a fairly thick and creamy sauce. In a pan fry the ground turkey meat with a tablespoon of olive oil. Pour into a bowl and mix it with white sauce, egg yolk and chopped parsley. Add salt and pepper and mix well.

Divide the dough into four parts to form 4 burgers. Beat the second egg in a bowl with the remaining egg white. Pass the burgers in flour, then in beaten egg and finally in breadcrumbs. Heat the oil in a high-sided frying pan, fry the burgers until golden brown on both sides. Drain on paper towels, and serve accompanied with fresh vegetables.

TIP If you do not want to use freshly ground, use the leftover meat.
